After all that detoxing I did over the weekend, it was ’bout time I get some toxins back into my system.  I made these brownies for a co-workers birthday, and they turned out to be dangerously delicious, like toxic good (sorry, couldn’t resist).  I knew that she didn’t like cakes, or cupcakes (lame), so I had to get a little creative.  After scouring the internet for the perfect sweet, I came across Jenna’s recipe.  Birthday girl always has a reserve of York’s peppermint patties in her drawer, so I knew these were perfect for her.

In my mind, it’s not a birthday brownie without some icing thrown on top.  How about homemade vanilla icing?

Don’t worry, I did plenty quality control.  So much so in fact, that I felt similar to how I felt on my yoga mat after day four of my yoga sweat-fest… ready to be sick.  Does that mean that you reap the same benefits from eating brownies as you do from Bikram?

Post-Bikram Peppermint Brownies

derived from Jenna’s recipe.

1/2 cup all purpose flour

1 cup sugar

1/2 tsp salt

1/4 cup cocoa

4 oz butter

8 oz semi-sweet chocolate chips

3 eggs

1 tsp vanilla extract

25 mini peppermint patties

Preheat the oven to 350.

Melt the chocolate and butter over low heat on the stove. Remove and whisk in the eggs. Add the flour, cocoa, salt and sugar and mix well to combine.

Line a nine by thirteen inch baking pan with tin foil. Grease up the foil, and then pour half of the brownie batter in the pan. Place peppermint patties over top and then spread the remaining batter over top.

Bake for about 40 minutes.

Let cool for at least an hour before cutting.
