Ugh, Monday. I skipped into my office, still feeling energized after such a lovely weekend. This unexpected Monday spike fell flat in approximately 45 minutes. It just happened to be a particularly stressful morning. Wah.
Anyways! Breakfast was a smoothie (blueberries, bananas, strawberries, coconut milk, shaved coconut).
Lunch was a copy-cat of last night:
The day flew and I debated going to yoga, orrrrr getting home in time to make dinner while the sun was still up so that I could take some pretty pics.
Guess what I chose?
I put some caramelized onions, mushrooms, peppers and organic pea shoots on top of whole wheat pizza crust. The pizza sauce was garlic, oil, Earth Balance, nutritional yeast, and white wine. I let it reduce on high heat. It was a delicious experiment.
Pinot noir tied my pizza together nicely.
See! I told you I’d eat something green eventually. Bachelorette time!
